I have a simular problem, I have and than I lost MMS and internet on 3G too. I discovered that this was happend after I edit file "/System/Library/Carrier Bundles/TMobile_me.bundle/carrier.plist", I was truing to add a "AllowEDGEEditing" line.
Solution is to revert this file to original. Than my MMS and internet on 3G come back and work again.
What I found is that every time I edit this file this happened. It look like that this file has protection from iOS 4 for editing. Olso I found that we have a "signature" line in "carrier.plist" file.

yesterday i upgraded my old 16GB 3G to 4.0. there were no apn settings showing at all. what i had done was used my old list of cydia apps and added them one by one. i had added the mms and tethering tweak and that screwed up the apn. i deleted that did the reset all network settings thing and then rebooted and my apn option showed up again. so i then added my data settings for t-mobile edge and all was fine
then i just copied over the t-mobile mms settings which i still had on my 3GS iphone which i had decided not to upgrade to 4.0. i manually added the t-mobile settings to the 3G had both the apn data settings installed as well as the mms and tethering settings correct and all working just fine.

Did you ever install alternate .ipcc files or mobileconfig files in the early 3.x days? If so, have you removed them yet? I've found in a lot of cases that having mobileconfigs or .ipcc files interfered with proper use of MMS on the AT&T network. To check, go to Settings -> General -> Profiles. You can remove any unnecessary / third-party .IPCC files or mobileconfig files from there. After doing that, reboot the phone and see what happens.

all you do is restore phone with 4.0 iso and when asked to make new iphone or choose backup just make a new iphone.
