Default Manually backup mail and wi-fi password in ios4.1.2

I would like to manually save all my wifi password and mail account password and email.
I do not want to decrypt, only save and put back in place after a restore.
Could you tell me wich files I have to save ?
    Thanks in advance

    Default

Wifi password is saved to keychain.
Pretty sure email account passwords are also saved there. There are a lot more files you need to back up to safely restore email account configuration in such a way that the saved passwords are still accepted.
