What I've found works:
-All the previous features of the 3.1.3 update (except tethering? Can someone confirm this?)
-Camera's Zoom
-All new UI features (Folders, Search web etc...)
-Multitasking (Although it's not very useful in it's current state as non-apple app's have yet to be developed to use this feature)
-Wallpapers
-Bluetooth Keyboard
What doesn't work
-Mail threads (like in gmail)
-iBooks (Icon is not even there)
-Game Center (able to make an account, but I don't think apple's end servers are functional yet...)
-Locations/Faces
I'm sure i've forgotten something, but for now this is what I've got, It's really a fantastic update and I agree with others in that Apple's philosophy is never to be the *first* at anything, it's to be the best, and if that takes an extra year or two i'm all for it...
Reply with things you'd like me to test out or with things you've found that are working/not working
Wouldn't iBooks be a AppStore app? Like the iPad...

Install the SDK -- that fixes the backups. If you're on a Windows machine, you're out of luck for the moment.

I can confirm. No Tethering, even with unsupported carriers. No way to enter APN information. IPCC does not work - the carrier bundles are additional signed, even the Unknown.bundle!
Perhaps tethering button will reappear if using supported Provider and Tetheringplan?

Tethering is officially supported by my carrier - however I am not a developer and have no plans to upgrade to such an unstable beta OS. I am really annoyed with Apple that even the Unknown.bundle is signed. My 3GS is officially unlocked and although right now I am using an official carrier - there is no guarantee I will still be using that carrier in the future, I want the flexibility that comes with official unlock. Not a crippled feature set when I move to a non iPhone carrier.

4.0 3G bugs
When I sync my 3G in the 4.0 I get this message: could not back up iPhone because iPhone refused the request.
I also can't get background wallpaper.
And of course no multitask even though the 3G can take it according to the jailbreak.

Just a quick update:
I can't get my visual voicemail to work, which really isn't THAT much of an inconvenience. I've had some crashes in messages, some strange behaviour in the ipod app and mail sometimes doesn't want to update my inbox but all these issues have been fixed (save the voicemail) by closing and opening again in multitasking. Hope everyone else is having a good time showing off the new OS to friends
Cheers

Beta 2
Hi all,
my observations of what doesn't work yet for the iPhone 3G on 4.0:
- push notifications unreliable
- Internet connection unreliable
- Wallpaper only works for lock screen, but in the settings a double image of wallpaper and lock screen is displayed
- grey water wallpaper has been added to the wallpaper collection
- visual voicemail works now
- screen lock got a lot slower
- phone sometimes doesn't recognize that it's being charged or connected to iTunes, iTunes doesn't always recognize the phone either
- photos don't save (no matter from which app)
- contacts don't sync
- folders only get reset when you re-arrange the apps using iTunes

beta4
APNs are editable, IPCCs are completely ignored and iTunes does not transport them to /private/var/mobile/Library/Carrier Bundles folder. Even with new Info.plist.
If the bundle is directly copied to the /System/Library/Carrier Bundles folder and symlinked with the MCC/MNC code it detects a new carrier bundle and then commcenter refuses it. Additional the editing of "Cellular Data" is blocked, until the bundle and symlink are removed and iPhone is rebootet.
this means: no longer unofficial carrier bundles possible without jailbreaking and patching.
+ calendar: birthdays of contact entries are shown in calendar
+ mail.app: all inboxes view
