If you are using the standard notes app on the phone then you can configure these notes to sync to mail.app (this is configured in iTunes)
Some mail services that you configure on the phone can sync notes over the air to the mail service (This does NOT include Exchange or Gmail configured with push mail)

If by notes you mean the notes app for the iPhone, then they should be sent to your email in the mail app on your computer.if it still can't work, you may refer to this artical,How to backup iPhone to Mac. Hope it will help you.

Launch iPhone to Mac Transfer software, and connect your iPhone with Mac, you will see all information about your iPhone, such as type, capacity, version, serial number, and format, will be shown on the main interface.

You can synchronize your notes with Mail on the Mac. I would suggest that you sycnchronize contacts and calendars that way also. It makes it easier to recover from a lost, stolen or inoperable phone.

You may use iCloud to transfer various data between iphone and macbook.

Alternative, you may try to use iPhone Transfer to backup and transfer everything from iPhone to Notebook.
