iTunes does save these files in the backups that it makes, and you can easily extract the files from those backups and use something like DiskAid to replace the files on a jailbroken iPhone. Since 3.0B2 has been jailbroken, getting access to the root FS is possible, so you *should* be able to directly overwrite the files on the phone if you wanted to say, do a restore to 3.0B2, set the phone up as a new iPhone, QuickPWN, have a working YouTube, then push all of your call log / sms log / etc. databases over to the phone.

I've never done it personally, but I have definitely extracted the files from the backups and noodled around with the files while they were on the iPhone. Never blatantly replaced them while the OS was running, I don't know if that would cause any problems.

You can delete the dbs and replace with no problem. I've done it before. If you delete and don't replace, a reboot will just create a fresh one

Looks like DiskAid doesn't support 3.0 and I can't get openssh to work after jailbreaking.
