Look for the one from TIM Italy (cause its an Apple partner). Open the package and then open carrier.plist with an editor suitable line Plist Editor from Apple.
Like AllowEDGEEditing it has settings for AllowMMSEditing...
Wait a second... how can you access to the carrier bundles in 3.0 without Jailbreaking?

You can start with the 2.2.1 carrier.plist and add the following keys:

    <key>AllowMMSCEditing</key>
    <string>1</string>
    <key>AllowMMSEditing</key>
    <string>1</string>
    <key>mms_proxy</key>
<string> ip address of MMS proxy </string>
    <key>mms_proxy_port</key>
<string> port for MMS proxy service </string>
    <key>mmsc</key>
<string> complete URL for MMSC (content adaptation) </string>

Then rebuild the bundle for your operator. Do not forget to bump the version number of the bundle up or iTunes will not offer the update. Once the bundle is rebuild, drag to iTunes and connect the phone. Once downloaded, reboot and it will be active.

That works great, but as far as I know only if you are on one of Apples partner carriers, cause the symlink pinting to the bundle would have to be created otherwise.

You are right only for "official" operators. Others, please wait for the jb.

i think you can trick it via "SupportedSIMs".

You just need to know your MCC and MNC. Thats what i did to get the bundle working. But my phone was unlocked before anyways.

Nope, it works the other way round. The iPhone looks for a combination of MCC/MNC what is a number that has to sit in /System/Library/Carrier Bundles/. In this case it is a symlink that points to a carrier bundle.

No you cannot, as it requires a simbolic link that has the current operator MCC+MNC as the name, pointing to the carrier bundle. If the link is not there, it will not work.
