Will this setup work? Any advice on audio and other add-ons like bluetooth, media card readers, extra firewire/usb ports?

For Audio check this list for Creative ones, if you want some professional cards, check the official websites to know if they have OSX support, for bluetooth check the HCL.
Everything else looks great :P not sure about your mobo, you can have better results with gigabyte ones, avoid nforce chipset.
