HD: 640GB 7,200 RPM (Specifically for this project)

I had a bit of a brain fart today, and would like to build a Hackintosh Mac Pro for video editing... I'm still in the early stages of researching it all but I thought I might start somewhere.
So, has anyone got a problem-free setup running perfectly? If I do this, and spend the money, I'd rather not come up against many issues.
I've already got a PC, and I'll post the specs in a bit... I've tried installing unRAID on it, but I'm getting errors every way I turn, so I'm hoping installing Mac on a PC will be easier than unRAID!
Also, what's the reliability like once everything's happily installed? Any errors I should be forewarned about?
I am wondering if there is a list of ideal components someone has posted here that is current possibly set up with what they believe is the best stuff. I am hoping to stay around 2k I am am planning on overclocking an intel i7 as well as starting out with a nive nvidia that I will after 6 months sli. That is not part of the 2k but extra and after the fact. I am having so much trouble finding stuff on this forum. I am sorry if this is all somewhere and I havent seen it yet????
First build and need help getting OS X running on my system. Its not completely finished yet, and all i have currently installed as of now is.....

.....so is there anything i should stear towards to make running OS X easier? I was planning on running an i7 processor but thats as far as ive gotten financially. I would really really appreciate somebody helping me through this process. If anybody has suggestions on the remainder of my items i need to buy that would be cool too. Asus Maximus II Formula - help please...
Okay, so there are several threads referencing this machine, but they're old relatively old, so I thought this might be the appropriate place to start. Specs as follows:
Intel P45 mobo [running patched bios 1901, AHCI enabled, XD bit enabled];
Intel E7400 2.8GHZ Core 2 Duo;
500GB SATA hd (x2) - 1 for Win7; 1 for OS X [hopefully] - the Win7 drive is disconnected for the purposes of my OS X installation;
ATI Radeon HD4870 1GB
I've tried to install iAtkos v.7, iDeneb 1.4, iDeneb 1.6, iPC 10.5.6 - all with no luck. Start off with a clean drive each time. I can boot with each flavor, but somewhere near the end of the install I get a kernel panic. I've read all the related threads and have tried to choose wisely re: the correct drivers/kernels/patches to enable based on what has worked with other owners of this setup, but so far to no avail.
I'd be willing to photograph my screen with each install and share the pics if it would help. There seemed to be some pretty knowledgeable folks on some of the Maximus II Formula threads. Maybe they'll jump in here - I can post on those threads as well if anyone thinks that will help. I feel like I'm pretty close - I'm sure I'm just missing something minor [fingers crossed].

Well I'll be - I futzed around with more install options and this time it installed. Rebooted into iDeneb. No audio yet, and for some reason I can't get either the Netgear driver or the comparable Realtek driver to recognize my USB wireless dongle [although it shows up in Sys Profiler]. Can't speak for ethernet as I'm in a spot in the house I'd have to run a shitload of cable and I'm not ready to do that...yet. Biggest problem is for some reason iDeneb 1.6 is not recognizing my optical drive - Sys Profiler says I don't have one. Of course I can boot from it if I set it to boot in bios and stick at bootable disc in it. Do I need to switch some settings back in bios to get it recognized properly?
