*Compatibility Information
The remote and mic are supported only by iPod nano (4th generation), iPod classic (120GB), and iPod touch (2nd generation). Audio is supported by all iPod models.
Looks like they changed something at hardware level. However, time will tell. I was eager to get one too.

I can plug an iPhone headphone on my 5th gen iPod Video. I will hear some music. I also can make my fingers to bleed while clicking its button, and it will not jump to next music nor play/pause it.
Besides a hardware connection to 4th pin, devices need to receive signal and understand it. Agreed iPhone has already the hardware connection, however software is not yet modified to understand new "keystrokes". Most probably you can, yes, use it on iPhones, but they will be feature-limited: Use as headphones, use its mic, use button to play/pause/skip, but no volume nor previous song triple-click. That may be the reason it is "not yet" iPhone friendly.
About classic "when will it be available" question, ask Apple, they surely knows
We only can speculate. Or wait for info to be leaked
