Default what if i get my iPhone in three weeks, and 1.0.3 is on the servers?

oke, i already (HW)unlocked three iPhones.

but i had to do a restore with every iPhone once in the process, before i got it they were new one 1.0.0 to get the newest firmware.

but what on the following scenario:

somebody buys me in two weeks new iPhones, say two new iPhones. probably they still have 1.0.0 preinstalled.
but what if apple releases 1.0.3 in the next few days?

then i couldnt update to 1.0.2 (which works) and would have to stay on 1.0.0 (where you cant enter APN).

sorry for the bad english, kind of a strange question, and i wouldnt even know how to explain it correctly in german ^^

wouldnt it be possible to make a "fake itunes updateserver" that gives itunes the 1.0.2 update instead of the 1.0.3?

in Itunes, when restoring, if you hold the shift key when clicking the restore button, you can choose which firmware restore file you want. So you should be okay, unless you want to be a guinea pig for testing the unlock with the new firmware, thats your choice.
