What happens if i restore my 1.1.1 FW on my unlocked phone?
I have a phone with the 1.1.1 FW (upgraded from 1.0.2) and I wanted to restore the FW since I think it might resolve a problem (my SMTP settings aren't being saved).
My phone is unlocked with anysim, can I just restore the firmware within iTunes? Do I need to do anything beforehand and will it maintain the current state (jailbroken, unlocked, etc.) after the restore?

yeah it should be fine.

u will just have to jailbreak it again,
use jailbreakme.com
the anysim unlock will survive the restore 
u may also want to reinstall bsd subsystem and the open ssh and everything else.
