Or will it merge the data (call history, etc) of each together?

I am trying to decide if I need to dedicate another computer to syncing a second phone.

Yes, you can have more than one phone sync to the same computer without merging any data.

You can do it. If you want them both to sync address book or calendar data with the same computer and do not want the data intermingled, it might be convenient to have two different accounts on the same computer, or you could look into syncing different groups and calendars from the same account to the different phones.
