I'm pretty sure the "safe mode" you're talking about has something to do with your jailbreak. I forget exactly what is causing it but if you research it a little more you should find what exactly is causing your iPhone to go into "safe mode".

ive had 2.2 for five days now and the only time my phone goes into safe mode is when i tell sbsettings to send it there... if its time to time then its not that much to worry about unless it does this everyday or hour or some regular time

safe mode is built in so that if a winterboard plugin goes haywire somehow then you are safe

keep in mind that its not just winterboard, any app that uses mobilesubstrate could mess up causing entry into safe mode

mobile substrate is what causes the safe mode issue.
if it becomes a problem simple thing is to not install it
there are some apps that require it though so dont install those
    winterboard - requires mobile substrate
    sbsettings also

its a shame, the safe mode thing comes up ofte enogh for me, at least 1 ro 2x weekly.

so what I've done is uninstalled mobilesubstrate which removes all other apps that require it.

now i like having customizations so i simply SSH and manually change the icons, wallpaper and what not. since doing it that way, not a single safe mode crash.

the safe mode problems are caused by third party apps from cydia and what not which is why apple will not allow winterboard and other apps of the like in the app store simply because they break stability.

if you want stability do nto use cydia apps or other programs that run in the background. SSH daemon can be stopped so its not always running in background, hence why ssh is a totally viable solution.

that and ssh is a good saving solution if you mess something up and dont want to restore just yet.... (unless you always have wifi off cuz you dont have internet connected lol)

An older version SBSetting had an issue with safe mode as well

If you have that installed make sure its up to date

Also make sure you're using a correct caller ID fix/patch for 2.2
