I dont know why this is happening, but can tell you how to get the photos off the iPhone first to make sure you dont loose them.
You must have BSD Subsystem and OpenSSH installed on the iPhone.
Connect to the iPhone with SFTP. On a Mac with Cyberduck, fugu, Transmit or others. On a Windows PC use WinSCP.
Connect to the iPhone and goto var/mobile/Media/DCIM
You should see a folder called 100Apple in there. Open it and copy all .JPG files to your Mac. check the photos on the Mac.
Maybe one of the files is corrupt, dont know. After checking your photos on the Mac you can delete the complete folder DCIM on the iPhone. After that, take a new photo. The folder and the contents (just the new photo of cause9 is newly created.
Check out if the problem still exists.
best,

i agree with xianli, make sure you got the latest update by clicking help and then software update or something similar. You can also probably download the latest version from apple manually.

I'm having this issue as well. I do have a 1.1.4 jailbroken iPhone, and I think I might have run one of the disk space utilities on Installer (BossTool maybe) that might have moved photos to get rid of the low disk space error. I'm not sure if this may be related, but its worth thinking about.

I had the same issue, could not sync. That happened after I enabled the screenshot functionality, I could see the screenshots in my camera roll but not even delete them on the iPhone. Don't know if this a related to thisd strange behavior, but...
