removing auto fill cache
Anyone know where cache files are for the browser and email client are or a way to clear out both cache without going through the whole unlock process again as it seems the way apple recommend doing it is by doing a restore on your phone.

Emptying Safari Cache
go to "Settings", then "Safari". At the bottom you will find the options "Clear History", "Clear Cookies", and "Clear Cache". (Firmware 1.0.2)
Not sure about email caches though.

Thanks that worked for Safari. Now if I can find a way to clear out my Emails Cache history that would be great. When ever I go to email program and start to enter an email address I see tons of address which include spam mail address and it is driving me nuts. I don't want to do a full restore every couple of weeks to clear out that cache and be forced to re-unlock it all the time.
