Firmware update without iTunes???

Hi,

I am getting an iPhone from the US later this week, which most likely will have firmware 1.0 on it. Now I want to update it to 1.0.2, because that is the latest firmware that allows the hacks at this point.
With a previous Phone I did this through iTunes. Plugged in the phone (all I can do in iTunes now is subscribe to AT&T) ran AppTapp. Then the phone shows up in iTunes, did a restore and voila... 1.0.2 was on the phone, ready to be unlocked etc.
But what if 1.1.1 comes out, then these steps won't work... the phone will upgrade to the latest firmware instead of 1.0.2.............
Is there a way to update the firmware without iTunes? :confused:
Oh BTW. I am on an Intel Mac.

im just new in this site, i have an iphone 3G with the version of 3.1.2 i would like to update it without using itunes into version 4.2 do anyone have any idea how? another thing, my phone was already jailbroken, not sure what application. can i jailbreak it again? and how? thanks.
