[2.1 ->1.1.4] Downgrade Questions

So I've decided that having a few apps isn't worth the poor signal strength, and want to downgrade my phone. My question isn't about the process but how do I extract my contacts, and calendar, I can ssh I just don't know the location of the files.

made for 2.0 but should work. You should sync before with iTunes to make sure to have all Musik, videos, Contacts and Cal events saved.
