from linux shell do:

sftp root@iphone_ip

get /private/var/root/Library/SMS/sms.db

Now, u can use sqlitebrowser (Homepage: http://sqlitebrowser.sourceforge.net/) - (from debian linux do: apt-get install sqlitebrowser)
then do:

sqlitebrowser sms.db

now go to "Browse Data" then Table message.

File --> Export --> Table as CSV file

Now u can use oocalc (openoffice calc) to modify it.

Use winscp to download sms.db from your iphone.

Download sqlitebrowser (win version)
