I guess I found it, but it's tricky.

The complete address including @ and domain is saved in
    /private/var/mobile/Library/AddressBook/AddressBook.sqlitedb

I found a faik address I created for testing in table "ABRecent".

Activated the row and deleted it.

I am using MesaSQLite on my Mac.

Only thing, playing around with the sqlite DBs can be risky. Dont use a text editor. Just delete that one row in an SQL editor and you will be fine. Got rid of my test address ;-)

    glad you found it
    Yeah, thanks volks

So the only way we have found is SSH into your phone and do it. Do we know if there is some way to do it legit?

    Here are the facts:
    - Apple has records of which iPhones have been activated through AT&T. They can bring up this information based on your serial number or phone number AT THE STORE or OVER THE PHONE

You can ask a genius in an Apple Store.

This is the only way possible... I could see in the future Apple would implement a "clear mail cache" but as of right now, SSH is the only way.

come on apple, give up. The "genuises" should have some kinda jailbreak tool to help ppl.

With jailbreaking, the user has much much more control over iPhone than Apple does. And apple doesnt like that at all.
