I'm pretty sure iTunes installs some other stuff in various other locations. I don't think that will be sufficient to completely downgrade to 7.3.2.

you could probably use a delete program like appzapper to clean itunes first then use this one.

    Default Library

You will have to put all your songs into the library as 7.3.2 wont recognize the library from 7.4

    From a MacFixIt.com article:

If you are experiencing major issues with iTunes 7.0.2 (or any iTunes 7.0.x release), you may want to use the following process to revert to iTunes 6.0.5:

    Delete the following files:

The iTunes 7.0 application (located in /Applications)
    com.apple.iTunes.plist (from ~/Library/Preferences)
    iTunes.pkg (from /Library/Receipts)
    iTunesX.pkg (from /Library/Receipts)
Then use the iTunes 6.0.5 (or earlier) installer.
They say to use the installer, maybe because the installer does more than just putting the main app in the Application folder.

Following the above (including running the 7.3 installer after deleting the indicated files) worked for me - I was able to successfully downgrade from 7.4. One note: I did need to copy my old backup iTunes Library file from the "Previous iTunes Libraries" folder, rename it "iTunes Library" and replace the one that 7.4 had put in ~/music/itunes folder. Then 7.3 started up fine.
