[iPhone OS] Undocumented Features
This is the official update list Apple is pushing us with iPhone OS 2.1:
- Decrease in call set-up failures and dropped calls
- Significantly better battery life for most users
- Dramatically reduced time to backup to iTunes
- Improved email reliability, notably fetching email from POP and Exchange accounts
- Faster installation of 3rd party applications
- Fixed bugs causing hangs and crashes for users with lots of third party applications
- Improved performance in text messaging
- Faster loading and searching of contacts
- Improved accuracy of the 3G signal strength display
- Repeat alert up to two additional times for incoming text messages
- Option to wipe data after ten failed passcode attempts
- Genius playlist creation
Let's add it down what we are finding:
- Main UI: New EDGE logo -- Blue E instead of blue square with white E: logo colors were inverted
- Main UI: SMS Preview does not show sender name/phone number when phone is locked and protected with Passcode Lock
- Settings: Carrier version -- as shown on General -> Settings -> About
- iPod App: Blue circle indicator full-filled on new movies/podcasts
- iPod App: Blue circle indicator half-filled on unfinished movies/podcasts
- iTunes 8: iPhone installed apps have usage displayed under iPhone's Summary, with Green color
Please post what you have find out not on these lists.

That one is pretty interesting! It referrs to the version of the carrier bundle you are using. One of the files "Info.plist" has set "CFBundleVersion" to "2.6" in firmware 2.1. Thats the value that is displayed in the setting. Also new in "Info.plist" is "MinimumOSVersion" set to "2.1".
I think apple is using it for automatic updates of carrier bundles. So it is not depending on fw upgrades.

This was available on 2.0.x too.
The simpler version is "hold home and tap on power"
