The easy way is to use an app in Cydia called Renamer.

The hard way is to go to all the app folders, open the Info.plist and find the line CFBundleDisplayName or CFBundleName. Below that is the name that is displayed under the icon. Remove the name, save the file and respring. Like so:

    change this
    Code:
    <key>CFBundleName</key>
    <string>AppName</string>
    to this

    Code:
    <key>CFBundleName</key>
    <string></string>

Actually I do not have enough idea on iphone 1g. There must be some way for you to remove the icon text. Try looking in settings.

Default Remove icon labels w/o winterboard for ios4.x

THIS IS HOW TO REMOVE ICON LABELS WITHOUT WINTERBOARD FOR IOS 4.X AND LATER

keep in mind that depending on what app you wish to remove the label for, you will have to go to different places to remove them. I will say what kind of app, an example app, the file path, then an example of what you will change, the word in green is your label you will remove. you can do this all on your phone with iFile from cydia. always remember to respring for changes to take effect. please let me know if i have left out any other example with this method of removal.
