I would use Independence, it has a button for changing the password.

probably a stupid question: using the button in iIndependence - what to fill in the account field?

Changing the root password is not only harmless to anything else that runs on the iPhone, but is actually highly recommended if you're going to leave SSH installed.

If you don't change the root password, then anybody can get access to your iPhone remotely while connected via EDGE or WiFi, and can pretty much do anything they please (ie, a hacker in a local Internet cafe could SSH into your iPhone, download all of your information and then wipe out your iPhone on you).

If you're not going to change the root password, or don't feel comfortable doing it, you should in the very least UNinstall OpenSSH and related tools from your iPhone so as to avoid unnecessary exposure.
