If you install the shai source, there is an item to install all the sources...

Actually there is a way. SCP into your phone and go to /var/root/Library/Installer. There is a file called PackageSources.plist. Backup that file, it has all the sources you added. So when you restore or whatever throw that file back in and all your sources will be back.
