The quick way: change UnknownCarrier.plist. This works for all the settings in the "Carrier based configuration file" that is working (some are not working in this firmware). But if you switch your SIM card (diffrerent network) it will not work.
The clean way: define your OPERATOR.CC.plist file (network operator "_" country code) in the same directory and add it's MCC-MNC to the CarrierMap.plist.
They the iPhone will pick your operator settings when you are on their network only. Any other network, including roaming will end up in the UnknwonCarrier settings.
There is a thread on this, mostly dealing with EDGE settings not sticking

That changed since 1.1.3. You better set up a complete carrier bundle for your iPhone that solves all the problems and does not touch the unknown carrier.plist. I guess aviegas' explanation is from < Firmware 1.1.3, probably 1.1.2. worked there though.

Both gives you some background, applying the changes is pretty easy in both cases. It solves the forward thing among other problems and lets you set it up the clean way.

yeah i have a vodafone new zealand carrier bundle
and i dont get that stupid message. there is a string in the carrier.plist that you can just put false i think for the ShowCallFowarded and ShowCallFowarding

yeah that carrier.plist did the thing where it turns "ShowCallFowarding" and "ShowCallFowarded" to false which is why some carrier bundles work

Got it now. I could find it once I added the source. For anyone else looking it's in the 'Tweaks 1.1.4' section and the program is called 'ForwardMSGfix 1.1.4'.
