how do you use itunes to copy songs from an iphone?

Anything you have bought on your phone or in itunes can be transferred back to itunes on your computer with itunes itself. Any of your own songs it is a little harder to do. Not sure for the iphone but I do remember there was a program a while back for ipods that could do this (red hat something?).
