It's even more annoying that it downloads SENT messages, so when I send an email from the iPhone, it acts like I got a response a few minutes later, when really it's just my own message being repeated back to me...

Hi,
i havent received my iphone yet, but i was goin to solve this problem by using IMAP on the iPhone (if possible?) and downloading emails to my mac by POP3. so i have ALL emails on my mac and just a live view on my email income folder. i set the preferences on my mac on a monthly delete of already downloaded emails.

Gmail is a POP server, no IMAP. So you have to...
The other probelem with the sent mails: on the iphone open Settings->Mail->Tap the Gmail account->Tap "Advanced" and set "Recent Mode" to off

Sometimes the recent mode doesn't work. Go into your Gmail settings on the computer and click "enable POP from now on", also you can set a filter to send emails from your own address strait to the archive.
If you use Outlook go to acct settings, advanced, and the last tab to the right and tell it to delete messages from the server. This will ensure you won't get the message if you have recieved it on your desktop (but also has a downside because if you leave your computer on and it gets the mail, you can't recieve when you are out and about).
