I may be mistaken, but I do not think that iTunes will update your Outlook. It reads and syncs with Outlook, but does not update it. iTunes does backup your iPhone contacts.

On a related note, I was wondering how I could get the pictures that I assigned to certain contacts. I took a picture with the camera months ago, assigned it to a contact, synced the iphone with iTunes, then some time within those last few months, restored and upgraded the firmware to 1.1.2.
So obviously the photos are all gone from my photo section due to the upgrading, but luckily enough they were still (somehow) attached to the contacts so when I restored what was backed-up in iTunes, they reappeared again, BUT only in the contacts not in the photo section.
My question is are the pictures stored anywhere else on the phone, or can I get them extracted from the addressbook.sqlitedb and addressbookimages.sqlitedb files??

You can use outlook express to back up contacts and messages.
I have done this but it was not the easiest thing to do.
You need to go to info in your iPhone settings in iTunes, select where you want to back it up to in outlook or yahoo, winddows or google, then sync your phone and job done.
