I know there was a trick before where you could run through activation and somehow bypass it with fake numbers. I take it this has been fixed?

yes u should be able to.

so just downgrade it and u can use it as just an ipod.

Of couse you can upgrade back to 1.1.1 after downgrading to 1.0.2!
