Default Mac or PC? I use Elgato Turbo (Mac only)

The Turbo is a hardware Mpeg-4 H.264 encoder (USB) with iPhone settings that does the encoding on its own, i.e. in the background. Thus freeing my two cores for more important tasks, like iNdependence etc...
    Firmware 1.0.2 -- TurboSim -- iTunes 7.4.1 (2)
    Call In/Out: Yes/Yes -- SMS In/Out: Yes/Yes
Mobile Data: GPRS only -- YouTube: Yes
Voicemail: No (favorite only) -- VM notification: No

Don't know about FLV but the best video converter (includes AVI and H.264) is freeware program called Handbrake

    Default iSquint maybe?

Since the iPhone supports 640x480, it should work too.

Can you actually convert videos with Handbrake? I can't figure it out. I always thought it was just for ripping DVDs.

The most feature rich 'free' (well shareware really) video convertor for Mac is FFMpegX (http://www.ffmpegx.com/). It's a little daunting for the beginner so I'd recommend investing in VisualHub (http://techspansion.com/visualhub/) which has iPhone profiles. and for DVD ripping and transcoding - It has to be Handbrake http://handbrake.m0k.org/.
