Im gonna sell my old iPhone and want to know if there's an easy way to clear my info... such as my name in itunes without having to restore it and go through the whole unlocked process again.

Regarding to your question, I think that there is no way to do that safely without a restore. Sorry about that. This is a good tutorial: How to Securely Erase Your iPhone Before Resale

restore is the best way to clear ur data
go into settings>>>>general>>>>restart>>>>clear all content and settings
