Default Accessing, exporting or backing up the wifi keys

Is there some way to extract all the wifi keys that are saved on the iPhone?
I would like to set up my phone as new phone on restore but that's the only thing stopping me from doing that without losing important information.

    Thanks!

The passwords are in /var/Keychains/keychain-2.db and the other data of those wifi networks are in /var/preferences/SystemConfiguration/com.apple.wifi.plist. However, it seems something in that keychain file may be different between 2.x and 3.0. I haven't checked what might go wrong, but you should make a backup of the 3.0 file before you replace it with the old one (there seems to be something like a 'certificate' in that file that is not there in 2.x).

Installing Cydia programs on a phone that has no internet connection: read this.

Editing binary .plist, .strings, .nib and .xib files:
    * on your computer: Windows tool / conversion website.
    * on your iPhone: convert those files in a terminal with plutil (installed with Erica Utilities) or edit them with iFile (Cydia links).

So if my backup is already from 3.0 and I copy these files, I should get all the wireless keys back?

    Yes, that should work.
