There's no physical difference in the SIM between the 3G and the 2G, so a SIM from a 3G should theoretically work just fine in a 2G (the 2Gs even came with SIMs that said 3G on them, go figure).
As to whether iTunes would activate properly, I can't think of any reason why this wouldn't work, but the only way to find out is to try.
