i thought that it would be good to bring this point into a seperate thread, as many people in the other threads respond that you just have to reset the network settings - that's not the case.
So, let me explain the issue:
On 1.1.3 i believe Apple entered the right APN settings for the official providers, so T-Mobile Germany, AT&T USA, O2 UK - if you then use a card of this providers on an unlocked/jailbroken phone, you don't see the EDGE settings anymore (under General - Network). If you put in another card, you can see the menu.
So we need to find out a way to enable the EDGE settings again, so that users can enter the right APN settings.
I tested to edit the carrier.plist in the Unkown Folder, but that didn't had any positive impact.
I hope that one of the developers has an idea how to fix that.

From a quick investigation it will depend on the baseband you have:
If your basebase is 04.02.13_G (from the 1.1.2 firmware) you will get EDGE.
On the other hand, if your baseband is 04.01.3_G (1.1.1) you will not have EDGE
Even with the 1.1.2 baseband you will need to fix the settings problem so that the EDGE settings will stick and set up a proper "Carrier Bundle" for the carrier dependent settings.
If all you see is a "block" without the "E", that's because on 1.1.2 and 1.1.3 the firmware differentiates between GPRS (slow) and Enhanced GPRS (EDGE). The block without the "E" mean your data connection is plain slow GPRS.
No i get the EDGE signal, im just missing the menu to enter the apn.
I'm on the 1.1.2 baseband.
samewith me. i did not have the option to edit edge settings while on 1.1.2, and also now on 1.1.3. (tried both nates and dev team)

The easiest way to do this is to install Erica's Utilities onto the iPhone. Then login via ssh, cd /System/Library/Carrier Bundles/. Then cd into the appropriate directory, in my case this was O2_UK.bundle/

5) That's it! Hopefully you should now be able to access the EDGE menu via Settings > General > Network > EDGE
Updated - I added the convert xml back to binary step which neonkoala mentioned. I'm not too sure if this is actually necessary, but if your having problems after editing the file its worth a try.

Ufortunatley that isnt working for me:
Im on tmob germany and changed the carrier.plist in the tmobile folder and in the unknown folder - does not bring back the menu!
I have the same problem and i try the steps to edit the carrier.plist file.
Unfortunately it crashed my carrier.plist-file. Can anyone send me a new one?
