Can a song be deleted individually without deleting it from a playlist in iTunes and then syncing? I'm asking because probable the DB file won't be updated that way, but maybe I'm wrong...

Just uncheck the song you want "deleted" from your iPhone, and resync your library to your phone. The unchecked songs will not sync, therefore they won't be on your iPhone. This way you won't have to earse them from your playlist.
