I just re-installed SSH, no chance, same Cyberduck, Fugu, etc. problem like before.
I'm not surprised, I still think the problem is somewhere else.
rm -f ~/.ssh/known_hosts didn't solve the problem either.

Update: I may have found where the problem lies, I get this error message when using the sftp console:
/usr/libexec/sftp-server: No such file or directory

I had this same issue during one of my upgrade parties, and specifically during one where I installed ssh using the terminal commands from the unlock tutorial.

I didn't like not having CyberDuck (in fact, I sing out "CyberDuck!" every time I launch that program, like I'm calling Hal the computer), so when I restored to do an upgrade with a few changes (getting YouTube to work and activating two different SIMs), rather than load up ssh from the terminal, I launched iNdependence and used that to install SSH, etc.

    CyberDuck thereafter worked.

I must confess that at the end of this otherwise successful upgrade (YouTube working and both my T-Mobile US and my Orange UK SIM activated), I couldn't get iTunes to recognize the 1.1.1 iPhone, but I think that was because I screwed up a step while renaming Media and MediaBackup (I did this with CyberDuck but did it in the /private/var/root directory instead of the /var/root directory).

So now I'm back at 1.0.2 and waiting for everyone to go to bed so I can attack this again.

I fixed it, here's the solution: use the sftp-server file from the 0.6 binkit package (you find it in the libexec folder), put it in your command line path and do the following:
    scp -rp sftp-server root@xxx.xxx.x.xx:/usr/libexec/
The xxx.xxx.x.xx represents your iPhone's REAL IP address!!!

I hate to say this but I do it anyway: following instructions 100% preciseley means that if the instructions tell you to use command line, you can't just use Cyberduck. This is why you screwed up. Follow the instructions 100% without any deviation (one exception though, I tell you at the end) and you'll be succesful.
Now here's the point where you should NOT follow the instructions given by Nervegas and the others (Jailbreak 1.1.1): the last iAsign step should be left away, otherwise you need to activate your iPhone after each restart. Also make sure you install BOTH BSD packages, BASE and EXTRA, the instruction is a little bit confusing.
DO NOT use Cyberduck, etc. when it says COMMAND LINE. OK?!

I've searched for more than an hour for sftp-server. Can you guys give me another hint where to find it?

update: Found it in the iNdependence package. Unfortunately same error:
    Unexpected end of SFTP stream

Check to see if the sftp-server has these permissions: -rwxr-xr-x

    SSH into your phone:
    cd /usr/libexec
    ls -l

check your PM if you need the file
