Just an idea, you might be able to copy it back and give it 777 after you restore your iphone. After that, you can transfer it to your pc as normal when you have a working firmware.
Yes you should have 4 ithmb files. All will be different size. each ithmb file has the same pictures in it just different sizes etc..... I assume you want the best picture quality and not the thumbnails so all you need is the largest one.
As for doing it on windows, I can't help you there. This might be of some help though.

I have noticed, i can upload Photos with WinSCP to the Film Folder and it will shown on the Iphone, but as "Thumbnail" it shows a white Quadrilateral.
It is possible to config, that iphone use a custom Image for all Thumbnails for the Photos i upload?
Standard is, one Picture, and one Thumb. (.JPG - .THB)
The Thumbnail will appear in the Gallery.
So, it is possible to config, that iphone use a custom Image (e.g. apple logo), as Thumbnail for all Pictures i upload in to the Film Folder?
So i dont need to creat a Thumbnail from any picture any time.

I have found another method to retrieve photos from your Iphone and to store them in JPEG format under Windows.
Basically, you need to use iPhoneBrowser from Windows to connect and browse your Iphone folders & files.
Go to the folder /private/var/mobile/Media/DCIM/100APPLE where your JPEG should be located. You see the JPEG files on the right panel.
NOTE: A subfolder .MISC should contain the corresponding tumbnails.
On the left panel (folders tree), right-click on the 100APPLE folder and select 'Backup Folder'. This will create a specific backup folders with all your JPEG files.
This backup folder can be found under C:\Documents and Settings\%YOURUSER%\Local Settings\Application Data\Cranium\iPhoneBrowser.
It should have a name like BACKUPS.20090725.183440 (with date/time of the backup). As you will see, it contains the full path like on your Iphone:
Therein you can retrieve your JPEG files :)
