Generally it depends on how server composes the response to your request.
Enter the URL to some dmg file you are trying to downoad here
I'll check it analyzing headers from server.

I can't seem to open the plist for the Quicktime plugin. Can't edit the file using Notepad. Should I open it with some other software?

Quicktime plist is in binary format, you should convert it to text.

Good idea ZuZ This plist needed an update after all what have been posted on this stread, have you tested it ? Can we really download .mpg and .mp3 with this plist ?

So now I'm able to download mp3s directly to the phone. Now here's the next question:

How the hell do I play them? The file will naturally not show up in my library until the iTunes database is updated, and that can't be done on the phone (right?). So how do I play the file?

You have two ways if you really don't want to/can't use iTunes for syncing.
1) Install MovenPlay , this application will manage to import the music (just set of mp3 files in some directory on your iphone) to something which internal ipod will recognize as list of the Songs. So after processing in MNPlight you can play them in iphone's ipod without interruption.
2) Install some web-server on iphone, I know two: lighttpd and ispit.
It is very easy to use ispit to just open the directory where mp3 files are saved in Safafri and click to play them (one by one). No playlists here
