What is your firmware? If 1.X, then www.mediamonkey.com will do it - it's currently incompatible with 2.0, but they are working on fixing it.

IOf you are on a Mac, consider paying 20 Dollars and get PhoneView. to me its a killer, works with all firmware & 2G&3G

if i use WinSCP , anyone know where is the mp3 (ipod) folder is ? and i can just drag the mp3 and picture out ?
thx

mp3s are in a database, so you won't be able to drag them out directly. Some of the images can be copied directly.

SSH to /private/var/mobile/Media/iTunes_Control/Music. This is where your music and videos are kept. Use WinSCP for Windows or Cyberduck for Mac.
Copy them out to a place on your desktop.
Because iTunes renames the files when it syncs them over we are going to use tagging software to reorganise and rename the files according to their tags to something ledgable. I'm going to use a free program called MP3Tag (http://www.mp3tag.de/en/), it's for windows. There is a free Mac equivalent called Tune instructor (http://www.apple.com/downloads/macos...nstructor.html) but I have not used it yet so can't offer any firm instruction. You should be able to see where I'm going with it and do the same on a Mac.
Once you've installed MP3Tag go to File, Change Directory and select your iPhone music directory.
Select all the files, right click, Convert, Tag - Filename.
What you'll see is '$num(%track%,2) %title%' and an example below. This denotes the format for the renamed files. For the iTunes format you want to paste '%artist%\%album%\$num(%track%,2) %title%' into that box.
Hit ok and job done, all you need to do is delete the F.. folders that were there before as they are now all empty. I suppose you could also just add them to your new iTunes library with the keep library folder organised option on and that should do the same. Again not able to test that but should do the job a little simpler.
Your image library is in a db file in '/private/var/mobile/Media/Photos' (I think, haven't got any on mine at the mo to confirm this). There is a commercial product that can extract these into individual files, Tansee iPhone Photo Copy. I found that a while ago, there may be a free option now, only $20 though.
If you need to know how to SSH there are tutoruals here that can explian how to do that.
