What language do I need to program apps for iPhone (I know C, HTML and JAVA)
Do I use XCode
and any necessary info

I bet a search on here would turn up a bunch of info.
Primarily Obj-C, you need a toolchain (http://idevdocs.com/tutorial.php?t=9), some people work in Xcode, although it's not fully integrated from what I've heard. Linux and Win are also options.

Java won't help much except for the concepts. HTML isn't even programming.
But knowing C is very good.
You'll need to use your Java and C skills to learn Objective-C. Then read up on the Cocoa APIs. Then read up on UIKit versus AppKit.
If you can manage that and build a simple app for Mac OS X on the desktop, then install the toolchain for iphone stuff. If you jump directly in, it'll be pretty hard. Not impossible, but hard especially because not everything works right.
