Okay to restor after jailbreak?
So I just successfully Jailbroke my iPhone with Redsn0w, now iTunes asks if I want to restore from my backup. Will this simply restore my settings and keep my Jailbreak? I'd like to do this, but not if it's going to cause a problem.

The best thing you can do is set it as a new iPhone, in order to avoid any issues

Restoring a backup made in a previous FW version (ie 1.xx or 2.xx in 3.0) almost always causes problems.
It is far better to set up as a new phone.
