You need a restore mate. Backup your stuff on iTunes, download the latest firmware you need at
http://www.felixbruns.de/iPod/firmware/ and then put device into DFU mode. Then using iTunes, shift+ click Restore, and select the firmware you downloaded.

Ok here is my problem the 8g has all the icons on it and works fine.
The 16g does not have all the icons on it. It is missing email, maps and such. It will not let me move the icons around at all. Is there something wrong with the 16g ipod? Please help

So even when you hold down an app and they start to wiggle, they can't move around? Well here's my advice... upgrade both to 2.2, as later firmwares DO come out for a reason. They are less glitchy and run a lot smoother. You can use this
http://www.felixbruns.de/iPod/firmware/ to download the latest fimwares. Make sure and don't mix up the 1st and 2nd gen firmwares. Also this is a way around paying $10 for the 2.0 update. Back up your stuff on itunes and restore. All your apps and music and videos will be saved.
