If you have a contract with an official carrier (ATT), just don't check the "activate the iphone". If you are using an Apple non aproved carrier, you should check it under quickpwn options

Are you on a legal contract with your iPhone? On a Mac or Windows PC?

Update/restore iPhone 3g using iTunes and let it activate your iPhone 3g for you. Then, launch Quickpwn to jailbreak your iPhone 3g.

Cheers~~
