I hope you did not update in iTunes to FW 2.2.1, if so you wont be able to unlock the iPhone 3G, only jailbreak and wait.

The only working way is if you are at firmware 2.2 on the iPhone, then use PwnageTool 2.2.5 to create a custom firmware 2.2.1 and apply it via iTunes. After that use Yellowsn0w to unlock....

Are you in the USA? If so, isn't T-Mob in the USA a different type of 3G than AT&T and what the iPhone is compatible with? try switching to EDGE in network settings maybe?

Sorry if I'm off base...

Hope it all works out.
