Hope I'm not too late: before you put the new HDD in, put it in an enclosure, then use Carbon Copy Cloner, which will clone your local "old" hard drive to your new one. That will simplify your process by a lot.
And yes, your new HDD is should be identical byte-wise to your old one--.
