I was wondering if anyone knows of ways to verify a phone is factory unlocked and/or legitimate without opening it... maybe by Serial# or something?

As any iPhone can be unlocked officially by Apple, I don't know if serial numbers will be of much help.

You really can only verify this by testing it out, restore, insert sim from one carrier, let iTunes unlock and activate, swap another carrier sim in and see if it still works.
