The easy way is to use an app in Cydia called Renamer.
The hard way is to go to all the app folders, open the Info.plist and find the line CFBundleDisplayName or CFBundleName. Below that is the name that is displayed under the icon. Remove the name, save the file and respring. Like so: change this Code:

Actually I do not have enough idea on iphone 1g. There must be some way for you to remove the icon text. Try looking in settings.
