Try googling for a vnc viewer.
ARD can connect to VNCs as well as ARDs. Shouldn't be a problem and there certainly isn't a need for a third party viewer if the VNC protocol is properly implemented.

At any rate, a nice third party app that works well (actually, I should say OK, there is a little bug, nothing major though) with Veency is Chicken of the VNC

Default External Keyboard Now Possible!

The other cool thing about this is that an external keyboard is now possible!! All it would take is a little external gizmo containing a small microcontroller to hook a keyboard up to the iPhone serial port. Feed the key clicks into the iPhone in the same way that the VNC server sends in key clicks! It might be possible to support an external mouse as well (although it doesn't seem like that is as useful).

Errr, vnc is a network protocol. Not the same as connecting to the serial (usb) port... Rather ask some devs to add a usb keyboard driver to the iphone kernel. I think I'd rather see one for bluetooth.

I fully realize what VNC is. However, the server very clearly has a way to take external inputs (ie, the packets over the network) and translate them into what is perceived as key-clicks by the iPhone software. I'd rather have a USB or BlueTooth solution as well, but there has been little to no progress (it seems) made on making that actually work as both would require kernel-level modifications if USB is even possible at all.

However, it would be a (probably) trivial modification to the VNC server to get keyclicks over the serial device instead of the network protocol. Worst case, I suppose one could write a VNC client that ran on the phone and talked VNC to the local server, but that seems like it would add a lot of unnecessary layers of software.
