I would like to update my iphone 3G that's in version 3.1.2 and modem firmware 05.11.07. It's been jailbroken and unlocked with blackr1n.

Please could anyone tell me the best method to do it? and moreover the maximum version and bootlauder that's possible to update.

I have the same problem with one difference - I restored and lost both the jailbreak and unlock - can I safely update via iTunes?

This question has been asked and answered hundreds of times on this forum already -- please search before you post.

To answer both of your questions:

If you rely on an unlock for your phone service, it is NOT safe to upgrade to 4.2.1 through iTunes directly -- you MUST use one of the approved methods of blocking the baseband update to retain the unlock (PwnageTool or TinyUmbrella, depending) after your upgrade. In this case, you'd either use PwnageTool to create a 4.2.1 pwned ipsw and then restore by following the directions provided, or you'd use TinyUmbrella to block the SHSH request for the baseband upgrade for the iPhone 4 while doing the restore to 4.2.1. This would get your device on 4.2.1 with a baseband that is still unlockable, after which you install ultrasn0w and are fine.

If you do NOT rely on an unlock, you can upgrade to 4.2.1 directly from iTunes and use greenpois0n to jailbreak and you'll have an untethered jailbreak (but a baseband that cannot be unlocked). In this case, shift-restore to iOS 4.2.1 after backing a backup of your device and then run greenpois0n after the restore to jailbreak.

Thank you, I understand, appreciate you answered anyway! I understand that even though my iphone 3G was unlocked with blackra1n but I restored the phone and had it factory unlocked and now I can safely update it to iOS 4 without bricking. Lets see if that works.

You should verify that you are factory unlocked before you update your baseband.

With OpenSSH installed, you can remove blackra1n hacktivation/blacksn0w unlock and trigger a re-activation via iTunes. This doesn't require a restore and can be rolled back if necessary.

I've posted how to do this previously.
