Not sure what happened to your 3GS jailbreak but blackra1n is reliable.
In the near future, Dev Team will release redsn0w 0.9 which will be able to jailbreak 3.1.2 firmware. This will be a good alternative for those not wanting to use blackra1n

It is not that "reliable"
I have a factory unlocked 3gs which was running fine until jailbroken with blackra1n it just keeps crashing (black screen!).
All the others 3GS i saw had wifi problems after being jailbroken with blackra1n not to mention losing signal most of the time.

Just to clarify, the wifi problems are an Apple bug but are made worse by blacksn0w and have nothing to do with blackra1n

Complain to Geohot if you want. 
Currently it is the ONLY tool to jailbreak 3.1.2 fw.
Other than that, you have to wait for redsn0w 0.9

Geohot did a great job and I can live with these small issues, the onlt thing i was saying is that you cannot call it reliable when it screws some stuff. . .

there are many offers on the internet from companies.
they are offering a service for a certain fee and I can´t believe that they are working with geohots software.
there must be a way to hack that phone!
any more ideas?

Do not pay for jailbreak or unlock. Geohot and dev team both preach that motto.
There is no other unlock for latest baseband. Devteam will not offer an unlock unless wifi bug is fixed (apple's bug)
The only other jailbreaks (pwnagetool 3.1.4. And soon redsn0w 0.9) are based on the same exploit but coded differently.
Anything else is reselling or illegally redistributing either dev team or geohots work. That includes sn0wbreeze which as well as redistributing devteam's work also includes apple copyrighted material.

The only other methodology is the alternate SIM carrier (piggy back and sets your SIM / iPhone interactions to think it is a test SIM, bad for the phone network itself!) and some hardy souls that actually reprogram the boot and NVRAM "the hard way" by desoldering chips and reprogramming them externally and re-soldering them. Not sure if the 3GS has this procedure yet.
Nothing is as reliable still as the unlock via software. And once unlocked usually always able to be unlocked, unless Apple makes an update that requires a later baseband while disallowing reinstalls of the older iPhone OS completely. And Cydia helps protect a bit against that ... if you allow registration.
And currently all the unlock and jailbreaks come from the same small group, the commercial resellers just steal the code and use it against the license terms.
I do forensic software investigations for a living sometimes, so would be happy if people funded it to analyze a variety of commercial products and "decompose them" to trace their origins. Well and get a minimum payment for my time too.
As an aside: I think the FCC should in the interests of not filling landfills with phones allow/force a manufacturer or third party licensed by the manufacturer the ability to unlock phones no longer tied to a contract with a carrier. I seriously think unlock is more important than jailbreak and have 3 iphones only one under contract currently (having upgraded and paid the price to upgrade early) to have development phones around for App testing. That a developer logically and maybe even ethically should test on the members of the family of devices and AT&T in the US makes that device cost $2K plus over the life of the contract is painful. I spend more on phones and their plans covering them than the actual development environment and SDK / developer license fees. (I have a few iPod Touches too for the same reason). The slate is gonna kill me if it actually is on sale in January. I am hoping for March so it is more able to be budgeted.
